These moulds are excellent for proving Sourdough. Using this mould gives a nice even pattern and professional finish.
We love these moulds as they are made from sustainable recycled wood pulp. It is far more sustainable than the cane banneton widely available. The wood pulp used is a natural product made from fresh spruce wood, which is free of any chemical additives and is produced in a purely physical way.
The fresh tree trunks, which come from sustainable forestry, are pressed against rotating stone rollers while being supplied with water. The wood structure is broken up and a fibre material is created from molecules of cellulose attached to one another. All other wood components, such as lignin, which is a natural wood adhesive are retained. We’ve used ours for over 5 years and they are as good as the day we got them.
Monique uses these in her bread making workshops. Just flour well and add your dough. This shape allows you to easily bake loaves side by side on one shelf in the oven. Its also means when you slice you loaf you get even slices great for sandwiches and makes it easier to store more loaves in the freezer. Round loaves take up loads of space in the freezer whereas this oval shape is more space efficient.
Care: after use allow the mould to dry at room temperature, and brush off any leftover flour and store in a dry place. Not not wash. Brushes can be purchased separately.
