This Sourdough baking kit includes

  • a 750g Medium Bread Mould (also called a Brotformen or Banneton),
  • Sourdough Starter,
  • Sourdough Starter care instructions,
  • Dough Scraper
  • Brotform/mould flour brush and
  • a Green Cottages Sourdough recipe.

The Sourdough starter is taken from mature stock used by Monique and is ready to go. No faffing trying to create your own.

We love these Brotformen as it is made from sustainable recycled wood pulp. It’s is far more sustainable than the cane banneton widely available. The wood pulp used is a natural product made from fresh spruce wood, which is free of any chemical additives and is produced in a purely physical way.
The fresh tree trunks, which come from sustainable forestry, are pressed against rotating stone rollers while being supplied with water. The wood structure is broken up and a fibre material is created from molecules of cellulose attached to one another. All other wood components, such as lignin, which is a natural wood adhesive are retained.
You may recognise the light yellow-brown discolouration of the shape, as lignin is responsible for the yellowing caused by heat during drying or by sunlight. This yellowing is therefore not a defect but evidence of the natural condition of the wood pulp used.

From wood pulp to bread form; water is used to produce pulp from the smashed up spruce wood. For each bread form a separate pressing tool is filled with the watery pulp. Under strong pressure, the water is pressed out of the fibre pulp in the pressing tool and the fresh bread form is created from the compacted fibre material.

During the subsequent drying process, the cellulose fibres cross-link and knot, giving the shape its mechanical stability. After drying, the rough edges of the moulds are sanded and a quality control is carried out, after which the moulds are ready for lots bread shaping!

Monique has had hers for approx 5 years. It creates a lovely finish to loaves. Monique finds that the dough doesn’t stick with theses moulds - a good coat of flour and they create a lovely crust. The brush is made from sustainable wood and is used to brush off excess flour from the mould after use.
